Date Pudding With Sauce
- Pudding:
- 1 tsp. baking soda
- 1 cup chopped dates
- 1 cup sugar
- 5 Tbsp. melted butter
- 1 egg
- 1 cup chopped nuts
- 1 1/2 cups flour
- 1 tsp. vanilla
- Sauce:
- 4 Tbsp. butter
- 3/4 cup dark Karo syrup
- 1 1/2 cup brown sugar
- Preheat oven to 350 degrees.
- Dissolve 1 teaspoon soda in 1 cup of hot water. Pour over 1 cup chopped dates and let cool.
- To 1 cup sugar and 5 tablespoons of melted butter, add one beaten egg, the dates, and 1 cup of chopped nuts. Add 1 1/2 cups flour and 1 teaspoon of vanilla. (editors note: I think I add the flour and vanilla to the sugar, butter and egg and then add dates and nuts). Mix lumpily (also editor's note).
- Bake in greased pan for 30 minutes at 350.
- Sauce:
- Combine 4 tablespoons butter, 3/4 cup dark karo syrup, and 1 1/2 cup brown sugar in a saucepan.
- Cook mixture to soft ball stage and let cool. Then add 1 cup carnation canned milk.
- Serve pudding warm with warm sauce spooned over it.
