Grandma Fahrenkrog'S V-8 Juice
- tomatoes
- peppers
- celery
- carrots
- lettuce
- beets
- watercress
- parsley
- I can this mixture throughout the summer season when my tomatoes and peppers get ripe.
- In large pans I fill with tomatoes, cut in half.
- I then add to each pan 1 pepper (cleaned and cut in strips), 2 strips of celery, 1 carrot (cut up), 2 or 3 leaves of lettuce, 1/2 cup of beets (I use my canned beets), a good handful of watercress and a few twigs of fresh parsley or 1 teaspoon of dried parsley.
- Cook this until heated, it doesn't have to be mushy.
- Then take it while it's hot and put through a tomato press.
- After running the vegetables through the press once, I then again take the skin and remains and run it through the press once more to get all the pulp out of it.
