Deluxe Strawberry Cream Pie

  1. Either by using your own favorite pie crust recipe, or purchasing a ready-made pie crust, follow the baking instructions and then set it aside to cool.
  2. In a small bowl using an electric mixer, cream together the cream cheese, vanilla and powdered sugar. With a spatula, slowly fold in the whipping cream until smooth, making sure to maintain some firmness (using a little less than a half pint is usually enough). Spread the creamy mixture over the bottom of the cooled pie crust.
  3. Wash and remove the stems from all three baskets of strawberries. Remove the excess water with a paper towel.
  4. Select one basket's worth of strawberries and arrange them (points up) in the cream. Set aside.
  5. Take the two remaining baskets of strawberries and place them in a blender, along with the honey, lemon juice and cornstarch. Once thoroughly blended, pour the mixture into a medium saucepan over low heat, stirring constantly with a wire wisk for 15 minutes or until the strawberry mixture turns dark red. Remove from heat.
  6. Cool the strawberry mixture by running it under cold water or by filling a large bowl with ice water and submerging the bottom of the pan. Stir with a wire wisk until cool. Pour the cooled mixture over the strawberries in the pie pan. Refrigerate to set, 1 hour.
