Vegan Oatmeal Pancakes
- PANCAKE MIX:
- 1 1/2c old-fashioned rolled oats
- 1 1/4c whole grain flour
- tsp baking soda
- tsp salt
- 2 tbsp ground flaxseed + 6 tbsp water
- 1 3/4c soymilk (soured with tsp of apple cider vinegar)
- tsp vanilla extract
- liquid stevia extract to taste (optional)
- Non-stick cooking spray
- TOPPING:
- pure maple syrup diluted with almond or soy milk OR
- unsweetened applesauce and a sprinkle of cinnamon
- Mix ground flaxseed with water in a bowl. Let stand for a few minutes, while mixing dry ingredients in a separate bowl.
- Back to bowl containing flaxseed and water: add rest of wet ingredients. Mix together, then combine wet and dry ingredients. Stir until just mixed. If batter is too thick, add more soymilk until consistency desired is reached.
- Spray non-stick cooking spray on heated pan. Cook pancakes over medium heat until bubbles appear on first side: flip and cook second side.
