Apple Teriyaki Salmon And Wasabi Mashed Potatoes
- 4 salmon fillets, 7 oz each
- Teriyaki-Apple Reduction:
- 1/2 cup apple cider
- 2 Fuji apples, peeled and thinly sliced
- 1/2 cup teriyaki sauce
- Wasabi Mashed Potatoes:
- 2 lbs russet potatoes, peeledd, cut into 2-in pieces
- 3/4 cup whole milk
- 1 tbsp wasabi powder
- 1/4 cup butter
- salt/pepper to taste
- Snow Peas:
- 1 cup snow peas
- 1/2 cup Tsuyu No Moto (Asian markets)
- Place apple cider and apples in saute pan. Bring to boil and reduce heat to simmer. Reduce by 3/4, stirring occasionally. Add Teriyaki to apple reduction. Stir well.
- Meanwhile, mashed potatoes: Place potatoes in large pot of cold, salted water. Boil til tender (20 mins). Drain, return to pot and mash. Combine milk and wasabi powder in small bowl. Stir to dissolve powder. Add milk mixture and butter to potatoes. Beat until fluffy and smooth. Season potatoes to taste with salt/pepper.
- While making potatoes, lightly steam snow peas and season with Tsuyu No Moto (keep warm).
- To grill salmon: preheat grill to medium high, oil grates well, and when hot, place salmon fillets on grill. Grill for 3-4 mins and turn, grill another side 3-4 mins and remove from grill.
