Spicy Mexican Brunch Eggs(Serves 8 To 12)

  1. Preheat oven to 400u0b0.
  2. Over medium heat, cook sausage, mushrooms and onion.
  3. Drain well.
  4. Season to taste with salt and pepper.
  5. Combine eggs and sour cream in blender.
  6. Pour into greased 9 x 12-inch baking dish (greased).
  7. Bake until eggs are softly set, 5 to 10 minutes.
  8. Spoon salsa over eggs.
  9. Add sausage mixture.
  10. Top with Velveeta, then Mozzarella and Cheddar.
