Spicy Mexican Brunch Eggs(Serves 8 To 12)
- 1 lb. bulk sausage, crumbled
- 1/4 lb. fresh mushrooms, chopped
- 1 medium onion, diced
- salt to taste
- freshly ground pepper
- 8 eggs
- 8 oz. Cheddar, grated
- 3 Tbsp. sour cream
- 3 Tbsp. hot or mild tomato salsa
- 8 oz. Velveeta cheese, diced
- 8 oz. Mozzarella cheese, grated
- Preheat oven to 400u0b0.
- Over medium heat, cook sausage, mushrooms and onion.
- Drain well.
- Season to taste with salt and pepper.
- Combine eggs and sour cream in blender.
- Pour into greased 9 x 12-inch baking dish (greased).
- Bake until eggs are softly set, 5 to 10 minutes.
- Spoon salsa over eggs.
- Add sausage mixture.
- Top with Velveeta, then Mozzarella and Cheddar.
