Beef Teriyaki Stir-Fry
- 1 C uncooked rice
- 1 lb beef sirloin, thinly sliced
- 1/2 C teriyaki marinade, divided
- 2 Tbsp olive oil, divided
- 1 medium onion, halved and sliced
- 2 C frozen green beans, rinsed and drained
- Cook rice according to package direction, omitting salt.
- Combine beef and 1/4 C marinade in medium bowl and set aside.
- Heat 1/2 Tbsp oil in wok or fry pan over medium high heat until hot. Add onion. Stir fry 3 to 4 minutes until crisp tender. Remove to medium bowl.
- Heat 1/2 Tbsp oil in wok. Stir fry green beans for three minutes until crisp tender and hot. drain off excess liquid. Add beans to onions in bowl.
- Heat remaining oil in wok. Drain beef, discarding marinade. Stir fry beef about 3 minutes or until browned. Stir in vegetables and 1/4 C marinade. Cook and stir until heated through.
- Serve over prepared rice.
