German Apple Pancake
- Pancake:
- 3 large eggs
- 3/4 cup milk
- 3/4 cup flour
- 1/2 teaspoon salt
- 1 1/2 tablespoons butter (melt in pan just prior to pouring in batter)
- Filling:
- 1 pound apples (3-4 apples)
- 1/4 cup melted butter
- 1/4 cup sugar or brown sugar
- Cinnamon to taste
- Preheat oven to 450*
- Use a blender to mix together eggs, milk, flour and salt until very smooth
- In a heavy 12 inch skillet, melt butter.
- As soon as it is quite hot, pour in batter and put the skillet immediately into the oven
- After about 5 minutes, turn the oven down to 350*, continue baking for another 10 minutes.
- The pancake should be light brown & crisp
- (During the first 5-10 minutes, of baking the pancake may puff up in large bubbles. If it does, pierce it with a skewer or a fork to deflate)
- While the pancake is baking, prepare the filling:
- Peel & thinly slice a pound of apples.
- Saute them lightly in the 1/4 cup butter and 1/4 cup sugar
- Season to taste with cinnamon
- Cook about 8-10 minutes over a medium flame. The apples should be tender but not too soft.
- (The filling can be prepared ahead and reheated just before serving)
- When the pancake is ready, slide it onto a platter, pour the apple filling on one side and fold over. A little melted butter can be poured drizzled over the top and powdered sugar sprinkled through a sieve.
- Serve at once.
