German Apple Pancake

  1. Preheat oven to 450*
  2. Use a blender to mix together eggs, milk, flour and salt until very smooth
  3. In a heavy 12 inch skillet, melt butter.
  4. As soon as it is quite hot, pour in batter and put the skillet immediately into the oven
  5. After about 5 minutes, turn the oven down to 350*, continue baking for another 10 minutes.
  6. The pancake should be light brown & crisp
  7. (During the first 5-10 minutes, of baking the pancake may puff up in large bubbles. If it does, pierce it with a skewer or a fork to deflate)
  8. While the pancake is baking, prepare the filling:
  9. Peel & thinly slice a pound of apples.
  10. Saute them lightly in the 1/4 cup butter and 1/4 cup sugar
  11. Season to taste with cinnamon
  12. Cook about 8-10 minutes over a medium flame. The apples should be tender but not too soft.
  13. (The filling can be prepared ahead and reheated just before serving)
  14. When the pancake is ready, slide it onto a platter, pour the apple filling on one side and fold over. A little melted butter can be poured drizzled over the top and powdered sugar sprinkled through a sieve.
  15. Serve at once.
