Pumpkin, Onion & Asparagus Cake
- 1 pumpkin
- 1 onion
- 1 bunch of asparagus
- 2 cups whole-grain flour
- 2 teaspoon baking powder (aluminum free)
- 2 eggs
- 1/2 cup milk
- 1/2 cup olive oil
- pepper
- a pinch of salt
- Optional:
- 3 garlic cloves
- 3/4 cup honey or maple syrup
- a pinch of nutmeg or cinnamon
- Preheat oven at 400u0b0F. Prepare the pumpkin by heating it up and the rid the pulp of the skin and seeds.
- Bring the asparagus to a boil in salted water until tender. Sautee the sliced onions and chopped asparagus in olive oil. Garlic optional.
- Beat the eggs with the milk and olive oil. Fold in the flour, baking powder and the salt. Add flour if too liquid.
- Mix in the pumpkin puree, then add the asparagus, the onions. into the dough and bake for 40 mins or until knife dipped in the center comes clean.
- Optional: add nutmeg or cinnamon for flavor, sweeten with 3/4 cup honey or maple syrup if served as a dessert.
