Pumpkin, Onion & Asparagus Cake

  1. Preheat oven at 400u0b0F. Prepare the pumpkin by heating it up and the rid the pulp of the skin and seeds.
  2. Bring the asparagus to a boil in salted water until tender. Sautee the sliced onions and chopped asparagus in olive oil. Garlic optional.
  3. Beat the eggs with the milk and olive oil. Fold in the flour, baking powder and the salt. Add flour if too liquid.
  4. Mix in the pumpkin puree, then add the asparagus, the onions. into the dough and bake for 40 mins or until knife dipped in the center comes clean.
  5. Optional: add nutmeg or cinnamon for flavor, sweeten with 3/4 cup honey or maple syrup if served as a dessert.
