Baked Oatmeal
- The night before, combine in large bowl:
- 1.5c rolled oats
- 1.5c buttermilk
- 0.5-1c chopped dried fruit (dates and cherries)
- 0.25-0.5c sweetener (~0.3c agave syrup)
- Spices to taste, ~1t cinnamon, 0.5t nutmeg, 0.25t ginger and 0.5t salt +1t vanilla
- 1 small apple large dice
- 1 banana large dice
- Let sit in fridge overnight.
- In AM preheat oven and stir in
- 1c buttermilk
- 2 large eggs lightly beaten
- 1t baking powder
- +/- 0.25-0.5c chopped nuts or sliced almonds
- Pour into greased pan
- Sprinkle with ~0.5c chopped/sliced nuts
- Serve with maple syrup and cream (or however you prefer).
- Bake ~30-40min, until brown on top and sides and just set in the middle.
- Modified for an 8x8 glass pan, ~6 servings. Double for 9x13.
- Grease pan, preheat oven to ~400.
