Southern Tier Pumking

  1. Before cooking:
  2. 1. Skin small Cinderella pumpkin, cube it and bake it for 45 minutes at 350 degrees. Then mash it, coat it with honey and cook for another 45 minutes at 350 degrees. Cool it to 154 degrees and put in mash.
  3. 2. Cut vanilla beans in half, soak them in 4oz of vodka for 2 weeks.
  4. Bring water to 154 degrees and mash for 90 minutes with 2-Row American Pale, Victory, Crystal 80L and pumpkin.
  5. Bring to a boil
  6. At first boil, add Demerara and Brown sugar, 3/4oz Magnum Hops
  7. After 45 minutes, add 1/4oz Sterling hops, 8oz Lactose
  8. After 50 minutes, add 1/2 tsp Yeast Nutrient, 1 Whirlfloc Tab
  9. After 55 minutes, add 2 tbsp ginger, cinnamon, cloves, nutmet and allspice
  10. After 60 minutes, cool.
  11. Primary: 2 weeks
  12. Secondary: 3 weeks
  13. Added to Secondary:
  14. 2 Madagascar Vanilla Beans
  15. 1 tsp. Pumpkin Pie Spice
  16. 1 tsp. Capella water soluble Graham Cracker Extract
  17. Yeast:
  18. 2 packs Safeale US-05
