Green Chile Enchiladas
- 1 to 1 1/2 lb ground beef
- 1/2 to 1 cup chopped onion
- Several shakes chili powder
- Taco seasoning pack
- 1 can mild green enchilada sauce
- 1 can cream of chicken soup
- 1 to 1 1/2 cup sour cream
- 1 can chopped green chilies
- 3 cups grated Mexican cheese
- Soft corn tortillas
- Brown beef and onions. Add chili powder, 1/2 cup water and taco seasoning. Cook a few minutes. Mix in about 1/2 of cheese and a little bit of the sauce made by mixing the soup, green chilies, sour cream and enchilada sauce. Spray casserole with Pam. Put some beef mixture on a corn tortilla and roll up, place in dish seam side down. Continue, then pour rest of sauce on top. Bake at *375 for about 15 to 20 minutes. Just before done, sprinkle rest of cheese on top.
