Herb Grilled Chicken
- Marinade
- Equal parts of the following herbs (4 T is a good starting point for each herb)
- Fresh Rosemary
- Fresh Oregano
- Fresh Thyme
- 1/4 C. Finely Chopped Shallots
- 3 Large Cloves Garlic
- Zest of one Lemon
- 1 C Mild/Buttery Olive Oil
- Kosher Salt and Fresh Ground Pepper to taste
- Meat:
- Chicken as desired
- Finely chop all herbs and combine in a bowl. Add the shallts, garlic, lemon zest, Olive Oil, Salt and Pepper. Let the mixture sit together for at least 30 minutes and as long as overnight to marry the flavors.
- Add the chicken to a large zip top bag and pour in the marinade. Work it around it coat all the chicken and let it sit on the chicken for at least two hours. Grill as desired.
- The above proportions are enough to generously coat and marinate bone-in 3-4 chicken breats and 3-4 thighs.
