Lemon Squares
- Crust:
- 1 C. butter, softened
- 1/2 C. white sugar
- 2 C. flour
- Bar:
- 4 eggs
- 1 3/4 C. white sugar
- 1/3 C flour
- 1 tsp. baking powder
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. lemon jest
- 1/4 C. orange juice (optional)
- 2 lemons, juiced (1/2 C.)
- Preheat oven to 350 degrees.
- In a medium bowl, blend together 1 C. softened butter, 2 C. flour and 1/2 C. sugar. Press into the bottom of an ungreased 9 x 13 pan. (You may cover pan with parchment paper) Bake for 15 to 20 min. until firm and golden.
- In another bowl, whisk together the
- eggs, and white sugar. Add the dry ingredients: flour salt and baking powder. Add the juices and lemon zest. Pour over the baked crust. Bake an additional 20 min. in preheated oven. The bars will firm up as they cool. Cut in 2 inch squares. You may frost if you wish.
