My Favorite Granola
- 4 cups old-fashioned oats (about a pound)
- 1 1/3 c (6 oz) raw pistachios
- 2 cups (6 oz) sliced almonds
- 1 cup maple syrup
- 1/3 cup unsweetened applesauce
- 1/3 cup oil (olive or canola)
- 1 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1 cup dried cranberries
- Preheat oven to 300
- Combine oats and nuts in large bowl
- In 2 cup glass measuring cup combine maple syrup, applesauce, oil, salt and cinnamon
- Pour over dry ingredients in bowl and mix to combine
- Spread on 2 half sheet pans lined with parchment paper or silpat liners
- Bake 25 minutes, stir, switch the pan positions top to bottom, and bake another 20 minutes
- Cool completely, then transfer to large bowl, add cranberries and stir
- Store in air-tight container
