Mexican Lasagne
- 1 lb. ground beef
- 1 c. salsa
- 1 (15 oz.) can tomato sauce
- 1 pkg. taco seasoning
- 1 lb. cottage cheese
- 2 eggs
- 1 tsp. oregano
- 1 pkg. floured or corn tortillas
- 1 1/2 c. mixed shredded Cheddar and Monterey Jack cheese
- Heat oven to 375u0b0.
- Brown meat and drain.
- Stir in salsa sauce and seasoning.
- Simmer and stir frequently for 5 minutes.
- In separate bowl, mix cottage cheese, eggs and oregano.
- Line bottom of lightly greased 13 x 9-inch baking pan with tortillas, overlapping edge.
- Layer with 1/2 meat mix and 1/2 cheese mixture over meat.
- Arrange remaining tortillas over top.
- Then repeat layer of meat and cheese mix.
- Spread with shredded cheese.
- Bake 30 to 35 minutes or until bubbly.
- Let stand 10 minutes before serving.
