Grilled Chicken Salad With Peanut Sauce

  1. 1. For peanut sauce, place peanut butter in a bowl and carefully whisk in soy sauce until smooth. Add honey and water. In another bowl, whisk lime juice with olive oil, honey and garlic for the dressing. Season with salt and pepper.
  2. 2. Place chicken breast in a bowl and add about 1/4 cup peanut sauce. Marinate in refrigerator until ready to cook. Grill chicken breasts 3 to 5 minutes per side on a hot barbecue or grill pan. Cooking times depend on the thickness of the chicken. Chicken should be just cooked through.
  3. 3. Place lettuce in a large bowl. Toss with dressing. Arrange chcken (whole or sliced) on top. Drizzle with peanut sauce and sprinkle with coarsly crushed tortilla chips.
