Grilled Chicken Salad With Peanut Sauce
- Peanut Sauce:
- 3 tbsp peanut butter
- 3 tbsp soy sauce
- 3 tbsp honey
- 3 tbsp water
- Dressing:
- 3 tbsp lime juice
- 3 tbsp olive oil
- 1 tbsp honey
- 1 garlic, minced (I think they probably mean 1 clove)
- Salt and pepper to taste
- 4 boneless, skinless chicken breasts
- 6 cups mixed salad greens
- 1 cup crushed tortilla chips
- 1. For peanut sauce, place peanut butter in a bowl and carefully whisk in soy sauce until smooth. Add honey and water. In another bowl, whisk lime juice with olive oil, honey and garlic for the dressing. Season with salt and pepper.
- 2. Place chicken breast in a bowl and add about 1/4 cup peanut sauce. Marinate in refrigerator until ready to cook. Grill chicken breasts 3 to 5 minutes per side on a hot barbecue or grill pan. Cooking times depend on the thickness of the chicken. Chicken should be just cooked through.
- 3. Place lettuce in a large bowl. Toss with dressing. Arrange chcken (whole or sliced) on top. Drizzle with peanut sauce and sprinkle with coarsly crushed tortilla chips.
