Lemon-Garlic Chicken Thighs
- 8 Chicken thighs
- 1/8 cup vegetable oil
- 1/4 cup lemon juice
- 1 tsp oregano
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 cup soy sauce
- 1 tsp parsley
- 1 tsp basil
- 1/2 tsp red chili flakes (optional)
- Soak the chicken pieces in salted water for 20 minutes (or just rinse if your in a hurry), pat dry and lay in a baking dish. They should be a bit crowed, touching each other.
- Mix up the rest of the ingredients and pur over the chicken, let stand for at least 20 minutes (I like to marinate for a few hours). Before placing in the oven, sprinkle with more oregano. Bake at 400 for 1 hour basting as needed. Broil for the last 10 minutes for a crisper top. Turn off the oven, cover the pan, and let the chicken sit for 15 minutes. Serve with rice and vegetable of your choice.
