Quiche

  1. Preheat oven to 375.
  2. Brush the crust with the egg white and prick it well.
  3. Cook the bacon until the fat is rendered out and drain on paper toweling.
  4. Scald the milk then cool slightly.
  5. Beat together the milk, eggs, salt pepper, nutmeg and chives.
  6. Sprinkle in the bottom of the pie crust the bacon and swiss cheese.
  7. Pour the custard mixture over it. Bake 35 to 40 minutes or until the top is a golden brown. For doneness, test as for a custard.
  8. Serve it lukewarm.
  9. You can also add cooked spinach or any other vegetables. I use a whole bag of baby spinach, cooked and chopped.
