Quiche
- uncooked pie crust
- white of an egg
- 5-6 slices of bacon
- 2 cups whole milk or half and half
- 3 eggs
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- pinch of nutmeg
- 1 teaspoon chopped chives
- 1/2 cup shredded swiss cheese
- Preheat oven to 375.
- Brush the crust with the egg white and prick it well.
- Cook the bacon until the fat is rendered out and drain on paper toweling.
- Scald the milk then cool slightly.
- Beat together the milk, eggs, salt pepper, nutmeg and chives.
- Sprinkle in the bottom of the pie crust the bacon and swiss cheese.
- Pour the custard mixture over it. Bake 35 to 40 minutes or until the top is a golden brown. For doneness, test as for a custard.
- Serve it lukewarm.
- You can also add cooked spinach or any other vegetables. I use a whole bag of baby spinach, cooked and chopped.
