Classic Banana Cream Pie

  1. In a large saucepan, mix together the sugar, flour, cornstarch and salt.
  2. Gradually stir in milk.
  3. Cook over low heat, stirring constantly, until mixture comes to a boil.
  4. Simmer 2 to 3 minutes, stirring constantly until thickened.
  5. Gradually stir hot mixture into eggs.
  6. Return egg mixture to saucepan.
  7. Cook over very low heat 2 minutes, stirring constantly.
  8. Remove from heat.
  9. Stir in vanilla.
  10. Cool.
  11. Peel and slice 2 bananas.
  12. Place in pie shell. Cover with filling.
  13. Chill several hours.
  14. Just before serving, peel remaining 2 bananas, cut in slices and place on top of pie.
