Irish Soda Bread
- 2cups flour
- 5Tbsp sugar, divided
- 11/2 tsp Backing powder
- 1 tsp salt
- 3/4 tsp baking soda
- 3 Tbsp cold butter, diced
- 1 cup buttermilk
- 2/3 cup raisins
- preheat oven to 375.
- Coat round cake pan with cooking spray.
- in large bowl, combine flour,4 Tbs sugar. baking powder,salt, and baking soda. Add butter, rubbing it into flour mixture with fingers, until coarse meal forms.
- Make a well in center of flour mixture. Pour in buttermilk and stir to blend. stir in raisins.
- flour your hands and shape dough into a ball.
- transfer to pan and flatten slightly {not all the way to edges}
- sprinkle with remaining 1 Tbsp of sugar.
- bake for about 30 min. or until toothpick inserted into center of bread comes out clean.
- Remove from oven and let stand 10 min. transfer to rack to finish cooling.
