Irish Soda Bread

  1. preheat oven to 375.
  2. Coat round cake pan with cooking spray.
  3. in large bowl, combine flour,4 Tbs sugar. baking powder,salt, and baking soda. Add butter, rubbing it into flour mixture with fingers, until coarse meal forms.
  4. Make a well in center of flour mixture. Pour in buttermilk and stir to blend. stir in raisins.
  5. flour your hands and shape dough into a ball.
  6. transfer to pan and flatten slightly {not all the way to edges}
  7. sprinkle with remaining 1 Tbsp of sugar.
  8. bake for about 30 min. or until toothpick inserted into center of bread comes out clean.
  9. Remove from oven and let stand 10 min. transfer to rack to finish cooling.
