East Bay Dungeness Crab Cakes

  1. shell crab and refrigerate meat.
  2. mix other ingredients. mix 2/3 of this with the crab, and form into round patties.
  3. Mix the remaining 1/3 of the sauce with 2 T mayo, 1 tsp sweet relish, and set aside as a dinner sauce.
  4. Heat olive oil in pan. high as you dare.
  5. When the oil begins to smoke, back off the heat to medium high and slide the crab rings into the pan. Sear 30 seconds , flip, and turn heat to low. Flip once again at 1 minute. Plate and serve.
