East Bay Dungeness Crab Cakes
- 1 dungeness crab, shelled.
- 1/3 avocado
- 1 T moutard de Dijon
- 1 tsp diced red onion
- 1 tsp sweet relish
- 6 drops worsteshire sauce
- 3 drops chipotle pepper (Embasa)
- pinch sea salt
- pinch black pepper.
- shell crab and refrigerate meat.
- mix other ingredients. mix 2/3 of this with the crab, and form into round patties.
- Mix the remaining 1/3 of the sauce with 2 T mayo, 1 tsp sweet relish, and set aside as a dinner sauce.
- Heat olive oil in pan. high as you dare.
- When the oil begins to smoke, back off the heat to medium high and slide the crab rings into the pan. Sear 30 seconds , flip, and turn heat to low. Flip once again at 1 minute. Plate and serve.
