Catfish And Slaw Sandwiches
- 1 c. thinly sliced green cabbage (about 3 oz.)
- 3 Tbsp. minced radish
- 1 Tbsp. plain nonfat yogurt
- 1 Tbsp. reduced-calorie mayonnaise
- 1/2 tsp. paprika
- 1/4 tsp. garlic powder
- 1/4 tsp. pepper
- 2 (4 oz.) farm-raised catfish fillets
- vegetable cooking spray
- 2 (2 oz.) Kaiser rolls, split
- 2 eggs, hard-cooked and diced
- 2 Tbsp. each: diced onion and celery
- 1 slice crisp bacon, crumbled
- 1 Tbsp. plus 1 tsp. reduced-calorie mayonnaise
- 1 1/2 tsp. minced fresh Italian (flat-leaf) parsley
- 1/2 tsp. Dijon-style mustard
- 1/4 tsp. prepared horseradish
- 2 diagonally cut slices Italian bread (1 oz. each), toasted
- 2 lettuce leaves
- 1/4 medium tomato, cut into 2 wedges
- In small mixing bowl, combine eggs, onion, celery, bacon, mayonnaise, parsley, mustard and horseradish.
- Cover and refrigerate until ready to serve.
