Vegetarian Stuffing
- 1 loaf day old white bread (cubed) or 1 package Stove Top stuffing mix
- 2 boxes morningstar breakfast links (20 oz. sausage)
- 1 onion - chopped
- 4 celery stalks - chopped
- 1 cup canned water chestnuts - drained and quartered
- 1 cup pecans (about 4 oz) - chopped coarsely
- 2 tbs fresh parsely - chopped
- 2 tbs fresh cilantro - chopped
- 4 tbs fresh sage - chopped or 1 1/4 tsp ground dried sage
- 3 cups vegetable stock
- 2 tbs butter
- 1/2 tsp pepper
- Preheat oven to 375 degrees
- On stove, melt butter over medium/low heat
- Cook sausage and crumble
- Mix sausage, onion and celery. Cook for 10 minutes.
- Mix in chestnuts, pecans, parsley, cilantro, sage and 1/2 cup broth. Cook for ~1 min.
- Add bread or stuffing mix and 1 1/2 cup broth.
- Add pepper.
- Stir well and put in oven for 30 mins covered (halfway at 15 mins -- remove cover).
