Dreamsicle Stuffed French Toast
- 1 - 8 oz pkg cream cheese (softened)
- zest of one orange
- juice of that same orange
- 1 tbs orange liqueur (Cointreau or Grand Mariner)
- 2 tbs sugar
- 1 1/2 tsp vanilla extract
- Whole loaf of bread - sliced 1/2 in
- 1/2 cup blueberries
- 8 eggs
- 1 c half and half
- cinnamon sugar
- Grease a 9x13 pan with butter or spray
- Slice a whole loaf of good bread (Italian, French, etc. - Challah would be good too) - You need an even number of slices, the idea is to fill your pan (about 1/2 thick slices).
- Mix cream cheese through vanilla in a bowl until well blended.
- Spread the cream cheese on one side of all slices of bread
- Place one layer of bread - cream cheese up in the pan
- Spread 1/2 Cup or more blueberries across the cheese
- Cover with the other slice of bread (cheese side down, on top of the berries)
- Beat eggs and half and half in the same bowl you had the cream cheese mixture to get any of the remaining orange flavor (add a splash more OJ or liqueur if desired).
- Pour over bread mixture let stand for 20 minutes and flip the sandwiches in the egg mixture, cover with plastic wrap and refrigerate overnight.
- Pull out casserole 30 minutes before baking
- Preheat oven to 350 deg
- Sprinkle tops with cinnamon sugar to create a glaze/crust
- Bake 40-45 minutes until custard is set and toasts begin to brown
