New Mexico Posole
- 1 T oil or bacon drippings
- 1 lb. Chpd smoked chicken
- 1/4 C coarsely chpd white onion
- 1/4 C chpd green chiles
- 2 cloves garlic, sliced
- 1 t chili pwd
- 1 T cornstarch
- 1 1/2 tsp. dried oregano
- 1/5 tsp. gr. cumin
- 1/2 tsp salt
- 1/2 tsp blk pepper
- 1 Can (14 1/2 oz) diced tomatoes
- 1 Can (14 oz.) white hominy
- 1 C chicken broth
- 2 whole Chipotle peppers in Adobo sauce
- Heat oil and saute onions, chiles, garlic, chili pwd., cornstarch, oregano, cumin, salt and pepper. Saute for 2 to 3 min.
- Add remaining ingred. and cook on med heat for 3 to 5 min. Reduce heat and simmer 4 to 5 min. Adjust salt and pepper to taste
