Gazpacho Soup (From The Kitchen Of Bad Dad)
- 1/3 cup olive oil
- 1 large can tomato juice (1 quart, 14 fl. oz.)
- 4 small cans V-8 juice
- 4-6 ripe tomatoes, finely chopped
- 1-2 medium sized cucumbers, finely chopped
- 1-2 avocados, peeled & finely chopped
- 2-4 stalks of celery, finely chopped
- 1/2 onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 1 yellow bell pepper, finely chopped
- Salt to taste
- Pepper to taste
- Garlic either two cloves or to taste.
- Tabasco or Red Hot Sauce to taste.
- Combine all ingredients in a large bowl. For best results, chill over night. Makes about 10 cups.
- "Bad Dad's" Note: Time-saving tip is to chop ingredients using a Sonoma Williams or other hand food chopper that does little squares. Also good served over chilled shrimp. Makes a 'cool' summer for my 'cool' family and friends!
