Lebanese Semolina Pudding
- 5 cups low fat milk,
- 1/2 cup drum wheat semolina,
- 1/2 cup sugar,
- 1 tablespoon orange blossom water,
- 1/2 tablespoon rose water,
- (last 2 ingredients can be found in middle eastern stores)
- Prepare broiler.
- Pour first 3 ingredients into a medium heavy pot and mix together. On a medium low heat, stir the ingredients constantly with a wooden spoon until thick and bubbly, about half an hour. Add the orange blossom water and rose water and boil for another 5 minutes. Pour in ramekins and let cool.
- Broil ramekins in oven for about 5 minutes or until golden brown. Refrigerate for 2 hours. Serve cold garnished with chopped pistashios and sliced fresh almonds that have been soaked in warm water, peeld and sliced. You can also garnish with fresh berries or sliced fresh mangoes.
