Chocolate Pies

  1. First lightly brown pie shells in oven.
  2. Set aside to cool. In a double boiler, melt margarine.
  3. Add milk.
  4. Separate egg yolks.
  5. Save whites and store in refrigerator.
  6. Stir egg yolks with spoon and add to milk and butter mixture in a double boiler (before milk gets hot).
  7. In a bowl, mix together sugar, salt, flour and cocoa.
  8. Add to mixture in double boiler.
  9. Stir continually until filling thickens.
  10. Add flavoring.
  11. Pour filling in pie shells.
  12. Beat egg whites until foamy; add 1/2 cup of sugar and beat until stiff.
  13. Spread over pies and lightly brown in a 350u0b0 oven.
