Classic Broccoli And Rice Casserole
- 1 cup chopped celery
- 1/2 cup chopped onion
- 1 tbsp olive oil
- 1 bunch broccoli, chopped into 1" pieces
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 1 8 oz jar cheese whiz (or 8 oz velveeta, melted)
- 1 cup rice
- 1/2 cup grated cheddar cheese
- paprika
- Saute onion and celery in olive oil until softened. Add broccoli and saute until broccoli is tender.
- Boil rice in 2 cups water 20 minutes or until all liquid is absorbed and rice is tender.
- Combine soups and cheese and stir until well blended. Combine broccoli mixture, rice and sauce in large casserole dish. Top with grated cheddar cheese and sprinkle with paprika. Bake at 375 for 20 minutes or until hot and bubbly.
