Strufoli(Honey Clusters)

  1. Heat oil to 365u0b0 in deep fryer or deep saucepan.
  2. In large bowl place flour and salt.
  3. Make well in center of flour; add eggs, one at a time, mixing slightly after each addition.
  4. Add vanilla.
  5. Mix to make soft dough.
  6. Turn dough out onto a lightly floured surface and knead.
  7. Divide dough into halves.
  8. Lightly roll each half 1/4 inch thick.
  9. Use palm of hand to roll strips to pencil thickness. Cut into pieces about 1/4 to 1/2 inch long.
  10. Fry only as many pieces of dough as will float, uncrowded, one layer deep in fat. Fry 3 to 4 minutes or until lightly browned, turning occasionally during fry time.
  11. Drain on paper towels.
  12. Meanwhile cook honey in skillet over low heat about 5 minutes.
  13. Remove from heat and add deep fried pieces, stirring constantly until all are coated with honey.
  14. Remove strufoli with a slotted spoon and set in refrigerator to chill slightly.
  15. Remove to a large serving platter and arrange in a cone shaped mound.
  16. Sprinkle with multi-colored jimmies.
  17. Chill in refrigerator.
