Honey Shrimp Salad
- 1/2 cup peanut oil
- 20-30 large shrimp
- 1/4 cup shredded ginger
- 1 cup raisin
- 1/4 cup vinegar
- 1/4 cup honey
- 1/4 cup chives
- 1/4 cup lime juice
- mayonnaise no. 1:
- 1 egg yolk
- 1/2 cup peanut oil
- mayonnaise no. 2:
- 1 egg yolk
- 1/2 cup peanut oil
- 1 tablespoon mustard powder
- Soak raisins in vinegar, 1/2 hour.
- Clean and devein shrimp.
- Make basic mayonnaise, chill.
- Steam shrimp with shredded ginger. Set aside, discard ginger.
- On cutting board, chop shrimp.
- Place shrimp in bowl.
- Drain raisins, add to shrimp.
- Drizzle honey and mix.
- Add chives.
- Add mayonnaise and mix.
- Cover and chill at least 4 hours.
- When ready to serve, make second mayonnaise, adding mustard powder to egg yolk.
- Toss in mayonnaise. drizzle lime juice and serve on hot dog roll or some other bread.
