Tilapia And Sweet Pepper Lettuce Wrap Tacos
- Hearts of Romaine Lettuce
- 4 Tilapia Fillets
- 1 Cup Whole Grain Brown Rice
- 1/2 each of Red, Yellow & Orange Sweet Peppers
- 1/4 of a Large White Onion
- 1 Cup Sliced White Mushrooms
- 4 Tbsp Olive Oil
- Mrs. Dash: Vegetables - to taste
- Cayenne Pepper - ground
- Garlic and Herb Chicken Seasoning: Fish - to taste
- 1 Jar of Salsa
- Tilapia:
- Heat oil and then add Fish. Sprinkle Garlic and Herb Chicken seasoning along with cayenne pepper (use sparingly) on both sides of fish. Saute for approximately 3 minutes per side.
- Vegetables:
- Clean and chop all vegetables
- Saute vegetables with oil and Mrs. Dash seasoning.
- Use the lettuce in place of the tacos. Fill the lettuce as you would a taco shell add fish, vegetables, rice and salsa.
