Spinach Artichoke Dip
- 1pkg. cream cheese
- 1 - 14oz. can artichoke hearts, drained and chopped
- 1/2c. spinach, drained and chopped (I use fresh and just double the amount)
- 1/4c. mayonnaise
- 1/4c. parmesan cheese, grated or powdered
- 1/4c. romano cheese, grated or powdered
- 1 clove garlic, finely minced (I actually use 3-5 cloves fresh garlic because I'm a garlic fiend. Jar minced garlic works fine too, the conversion for fresh should be on the label)
- 1/2tsp. basil (fresh is better than dried)
- 1/4c. mozzarella cheese, grated
- 1/4tsp. garlic salt
- salt and pepper to taste
- Allow cream cheese to come to room temp. Cream together mayonnaise, parmesan, romano, garlic, basil, and garlic salt. Mix well. Add the artichoke hearts and spinach, mixing until evenly blended. Store in a container until you are ready to use. Spray pan/casserole dish with cooking spray(Pam), pour in dip mixture and top with mozzarella. Bake at 350 for 25min. or until top is browned. Serve with sliced baguette or blue corn chips.
