Bok Choy Salad
- 1 Bok Choy
- 2 scallions
- The Crunch:
- 1/2 cup slivered Almonds
- 1/4 cup Sesame Seeds
- 2 Pkgs Ramen noodles (do not use flavoring packet)
- 1 stick Butter
- Dressing:
- 3/4 cup Oil
- 1/2 cup Sugar
- 1/4 cup white Vinegar
- 2 Tbsp Soy Sauce
- Chop Bok Choy and Scallions.
- Cover with a damp paper towel and refrigerate
- Preparing the "Crunch"
- Melt Butter and add the almonds, sesame seed and Ramen that have been crunched in the package
- Saute until lightly browned. Drain on paper towel. Cool,put in a plastic bag and refrigerate.
- Dressing:
- Combine the 4 ingredients in a jar and shake well. Refrigerate
- Just before serving, place Bok Choy & Scallions in a large bowl. Add the "crunchies". Top with dressing and toss to coat. Serve immediatley.
