Watercress And Apple Salad With Feta Dressing
- Watercress (4 handful bunches) - leaves stripped off thicker twigs.
- 2-3 Apples (I use granny smith as I like the tartness but braeburn etc fine)
- Dressing
- 250g +/- Feta (Plain goats milk) finely chopped/crumbled
- Garlic clove, crushed and finely chopped,
- White wine vinegar (or sherry vinegar for sweetness)
- T brown sugar
- Fresh fennel (Bulb and top seperate)
- Place all dressing ingredients (excl top of fennel)into a shaker (jar) and shake up - use a stick blender if needed but leave it quite thick. Add the finely chopped fennel to the dressing and chill till needed.
- The dressing should be defined by your tastes - if you prefer stronger add more vinegar, sweeter use sherry vinegar or add more sugar.
- Plate up the watercress leaves on a nice platter. Peel, core and slice the apple (top/bottom length of the apple to make nice thin slices). Plate these up on top of the watercress.
- I don't dress the salad I leave the guests to do that.
