Black Bean Turkey Chili
- 1 tablespoon vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 pound ground turkey
- 2 cans black beans, 15 ounce or 560 grams, drained (reserve liquid)
- 1 can refried black beans, 15 ounce or 560 grams
- 1-1/2 tablespoons mild chili powder
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1-1/2 teaspoons ground cumin
- 1 can crushed tomatoes, 14 ounce or 500 grams
- 1 tablespoon red wine vinegar
- 1/2 jalpeno pepper, minced with seeds in
- 1/2 teaspoon or salt to taste
- Heat oil in a dutch oven or large pot over medium heat.
- Stir in onion, jalapeno and garlic; saute until onion is translucent.
- Add seasonings and continue to saute for 1 minute.
- Add turkey and stir until meat is browned.
- Add beans, tomatoes, and vinegar. Add reserved liquid from beans as desired.
- Reduce heat to low, cover and simmer for 1 hour.
- Adjust seasonings and serve with corn bread.
