Chocolate Peppermint Cookies

  1. Mix the flour, cocoa, baking soda, baking powder, and salt in a bowl. Beat butter and sugar on medium high speed for 1 minute. Reduce speed to medium low and add egg, then yolk, beating well after each addition. Beat in peppermint extract. Slowly add the flour mixture and beat until just incorporated. Shape dough into two discs, wrap in plastic and refrigerate until firm.
  2. Preheat oven to 325 degrees. Roll out one disc of dough on a lightly floured surface to 1/8 inch thickness. Cut out desired shape (I used a candy cane shape) and place on a cookie sheet one inch apart. Bake until dry to the touch, about 11 minutes.
  3. Melt chocolate in the microwave on medium power in 30 second intervals, stirring in between, until completely melted. Dip the cookies into the chocolate, scraping off excess from underside on edge of bowl (I dipped only the top 2/3rds of the candy canes). Place on wax paper or parchment. Sprinkle liberally with candy cane pieces and let cool.
