Fruit And Nuts Slaw
- 1/2 cup mayonnaise (regular or low-fat, NOT non-fat)
- 1/3 cup plain yogurt
- 3 tablespoons white sugar (or sugar substitute)
- 1-2 tablespoons white vinegar
- 1 head green or purple cabbage, shredded
- 3 ribs celery, sliced
- 1 cup fresh blueberries
- 1 cup fresh strawberries, sliced
- 1 cup seedless red or green grapes, halved
- 1/2 cup dried sweetened cranberries
- 1/2 cup sliced almonds
- 1/2 cup salted cashews
- 1/2 cup sunflower kernels
- 4 slices bacon, cooked crisp and crumbled
- In medium bowl, whisk together mayonnaise, yogurt, sugar and vinegar; set aside.
- In large bowl, combine all other ingredients. Gently fold dressing into cabbage mixture until completely coated.
- Cover and refrigerate at least one hour and up to 4 hours before serving.
