Green Chicken Curry
- 6-8 pieces of chicken, skin removed
- 1 bunch of cilantro
- 3-4 cloved crushed garlic
- 1" fresh grated ginger
- 1 tsp. turmeric
- 2 tsp. coriander powder
- 1/4 tsp cumin powder
- 8 oz. plain yoghurt
- 1 onion chopped fine
- balsamic vinegar or tamarind paste to taste
- Blend cilantro and yoghurt till well blended and set aside
- Heat 2 T. olive oil in heavy pan and brown onions.
- Add ginger and garlic.
- Cook for 1 minute and add in chicken and brown.
- Add in spices and cook for 2 mins. Turn flame down to simmer and cook till meat is done. Uncovered. Keep and eye on it as you don't want it to get too dry, if it does you may add in some broth.
- Take off heat and let cool slightly and then add in blended yoghurt. Add salt to taste and either a bit of balsamic or tamarind paste to taste.
