Tiramisu

  1. 8 egg yolks and 2 oz. sugar - mix with whisk in a double boiler, over a low boil until frothy. Cool over ice. Set aside.
  2. In large mixing bowl mix 600 ml whipping cream, 2 oz. sugar, 1 oz. marsala wine and l tsp vanilla.
  3. Whip so the mixture is creamy, but firm
  4. Add marscapone cheese (4 - 6 oz) and whip.
  5. Add egg yolk mixture to the above and mix until it is creamy and firm. Cool in refrigerator
  6. Take lady fingers and soak them in espresso (with 2 oz. marsala wine). Let the lady fingers become 1/2 soaked until they are all soft
  7. Lay down a layer of espresso lady fingers in a pan. Layer on top the whipping cream - cheese mixture. Spread until it is smooth. Repeat these steps. Add sprinkled cocoa on top. Chill for l hour.
