Homestyle Lentil Soup
- 1 package brown lentils, sorted and rinsed
- 5 tablespoons tomato paste
- 1" piece of cinnamon stick
- 1 medium clove of garlic, lightly crushed
- 1 bay leaf
- 1/4 cup olive oil
- 1 small yellow onion, finely chopped
- 8 cups water
- Finish with:
- Salt to taste
- Red wine vinegar to taste
- Feta cheese
- Place all ingredients in pot. Bring to boil. Turn down heat medium low and cook at a slow simmer for 45 minutes to an hour. Discard cinnamon stick, garlic and bay leaf.
- Add salt to taste and 3 tablespoons red wine vinegar.
- Enjoy this soup with crusty bread, feta cheese and extra vinegar for those who want it. Some folks like the feta in their soup, others on the side. There are no rules.
