Homemade Chicken Noodle Soup
- 180 grams noodles (asian noodles)
- 1 pound boneless chicken (boiled and sliced)
- 1 cup sliced onion
- 2 cloves crushed garlic
- 1 jalapeno thinly sliced
- 1 whole tomato sliced
- 1 cup chopped cabbage
- 1/2 cup green peas (frozen)
- 1/2 cup grated carrot
- 1/2 cup red bell pepper thinly sliced
- 50 grams spinach (optional)
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 2 tablespoons vegetable oil
- 1 tablespoon lemon juice
- 2 tablespoons chopped cilantro
- 2 tablespoons green onion
- 1 teaspoon crushed ginger
- 1 teaspoon ground cumin powder
- 1/4 tablespoon ground turmeric
- 1/2 teaspoon chilli powder
- 4 cups of water
- 3 cups of chicken broth
- Heat the oil, add garlic fry for a minute.
- Add chicken and fry until chicken is slightly golden.
- Add onion and fry 2 minutes.
- Add carrot , peas, red pepper,cabbage and salt. Cook for 3-4 minutes.
- Add cumin, ground pepper, turmeric and chili powder. Mix well.
- Add chicken broth and bring to boil, add noddles.
- Add soy sauce, water. Bring to boil. Cook 5 minutes.
- Add spinach, jalapeno, tomato, lemon juice and ginger paste. Mix well.
- Garnish with cilantro and green onion.Ready to serve.
