Mom'S Special Chinese Chicken With Cashewnuts
- For Marinade
- Boneless diced chicken- 200 gms
- Salt- 1/2 tsp
- Egg- 1 beaten
- Cornflour- 1 tbsp
- Canola Oil- to deep fry
- For Sauce
- Onion- 1/2 , cut in squares
- Green Pepper- 1/2 , cut in squares
- Salt- 1/2 tsp
- Soya Sauce- 1 tbsp
- Water- 4 tbsp
- Cornflour- 1 tbsp
- Fried Cashews- 20 gms
- Marinate chicken pieces in all of the marinade ingredients for 1/2 an hour.
- Now deep fry the chicken pieces in oil.
- In a bowl, dissolve the cornflour in the water by stirring with a spoon.
- In a separate pan, heat 1 tsp oil. In that saute the onion and green pepper pieces.
- Add cashews, chicken pieces , soya sauce, salt and then cornflour mix .
- Toss well. The chicken should be dry, but with some sauce.
