Chicken Macaroni And Cheese
- 1 (8 oz.) pkg. elbow macaroni, cooked (keep warm)
- 3 Tbsp. butter or margarine
- 1 small green pepper, chopped
- 1 celery stalk, chopped
- 3 Tbsp. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. milk
- 1 (5 oz.) can chunk chicken
- 1 (4 oz.) pkg. shredded Cheddar cheese
- In a 3-quart saucepan over medium heat, melt butter or margarine. Add green pepper and celery. Cook until tender, stirring occasionally. Stir in flour, salt and pepper until blended.
- Gradually stir in milk. Cook, stirring constantly, until sauce thickens slightly. Stir in chicken and shredded cheese just until cheese is melted.
- Remove from heat. Stir cooked, hot macaroni into cheese mixture until well blended. Serve with salad and crackers or hot bread.
- Kids will love this.
- Makes 6 to 8 servings.
