Lasagna With Mushrooms(Serves 8)
- 1 (8 oz.) pkg. lasagna noodles, cooked
- 1 lb. lean ground beef or turkey
- 1 c. chopped onion
- 3 cloves garlic, finely chopped
- 3 1/2 c. tomato juice
- 8 oz. fresh mushrooms
- 1 (6 oz.) can tomato paste
- 1 Tbsp. Worcestershire sauce
- 1 tsp. oregano leaves
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 (15 to 16 oz.) container Ricotta cheese
- 1 c. grated Parmesan cheese
- 2 c. (8 oz.) shredded Mozzarella cheese
- parsley flakes
- In large saucepan, brown meat; pour off fat.
- Add onion and garlic; cook and stir until onion is tender.
- Stir in tomato juice, mushrooms, tomato paste and seasonings.
- Cover.
- Simmer 30 minutes, stirring occasionally.
