Slow Cooker Turkey Chili
- 1 pound turkey tenderoins or 1 pound lean ground turkey breast
- 1 (15 ounce) can no-salt added pinto beans, rinsed and drained
- 1 (14.5 ounce) can no salt added diced tomatoes, undrained
- 1 cup water
- 1 (8 ouce) can no-salt added tomato sauce
- 1 medium red bell pepepr diced
- 1 medium onion, diced
- 2 teaspoon whole coriander seed
- 1 tablespoon chili powder
- 2 teaspoons celery seeds
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano, crumbled
- 1/2 teaspoon salt
- 1. If using tenderloins, cut them into 3/4 inch cubes. Put the tenderlins or ground turkey in a slow cooker.
- 2. Stir in beans, tomatoes, water, tomato sauce, bell pepper and onion
- 3. Using a mortar and pestle, crush tie coriander and celery seeds together or put the seeds in an airtight plastic bag and crush them with a rolling pin. Stir into the slow cooker with the remaining ingredients.
- 4. Cook on high for three to five hours or on low for seven to ten hours, until the turkey is no longer pink in the center and the vegetables are tender.
