Apple Buttermilk Muffins With Coconut Crumble

  1. 1.treheat oven to moderately hot. Grease 12-hole (1/3 cup/80ml) muffin pan.
  2. 2.toconut crumble: place ingredients in small bowl; rub butter into mixture using fingertips.
  3. 3.tombine flour, sugar and cinnamon in large bowl; stir in apple, then combined egg, buttermilk and oil. Spoon mixture into prepared pan; top with coconut crumble. Bake in moderately hot oven about 20 minutes.
