Building A Better Burrito
- Filling ingredients: 1/2 small head of red cabbage - shredded; 15 oz black beans - cooked and cooled (may substitute with canned, but wash well); 1 ear of corn - steamed, cooled, and cut from the cob (may substitute with 7 oz canned); 1/2 medium Vidalia onion - chopped; 1 medium carrot - peeled and shredded; 2 tablespoons of fresh cilantro - finely chopped; juice of 1 lime; 2 tablespoons of soy sauce; 3 tablespoons of sesame oil.
- Optional filling ingredients: 1/2 medium red bell pepper - thinly sliced; 3 garlic cloves - crushed or finely chopped; 1/2 diced mango; dry roasted peanuts - to taste (only if your child isn't allergic to peanuts and if peanut products are allowed at your child's school).
- Additional ingredient: whole wheat tortillas - size depends on the age and appetite of your child (may substitute with whole wheat wraps).
- Place all of the filling ingredients into a large, plastic, sealable container and shake well. Taste and add optional filling ingredients if desired. (Note the peanut warning above.) Filling is so flavorful that additional salt is not recommended. Refrigerate overnight.
- In the morning, use a slotted spoon to drain enough filling for one tortilla. (Drain well.) Place the filling in a long strip down the center of the tortilla, leaving approximately 1-2 inches at the bottom and at the top. Fold the tortilla tightly around the filling in the traditional burrito style (bottom, left, top, and right). Wrap the burrito in foil and your child can simply peel the foil away as she/he eats, preventing the burrito from falling apart and making clean-up easy. Pack in lunch box with a cold pack.
- A single burrito, along with a cartoon of milk or bottle of calcium-fortified orange juice, is a complete meal.
