Hummingbird Cake
- 3 cups flour
- 2 cups sugar
- 2 tsp orange zest
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 eggs (beaten)
- 2 cups bananas (chopped)
- 1 can crushed pineapple in juice (undrained)
- 3/4 cup vegetable oil
- 1 1/2 tsp vanilla
- 1/2 cup pecans (chopped)
- Orange Glaze
- 2 cups powdered sugar
- 2-3 tbl orange juice
- Preheat oven to 325F. Grease and flour 10in fluted tube pan. Mix in large bowl flour, sugar, zest, soda, cinnamon and salt. In seperate bowl stir together eggs bananas, pineapples, oil and vanilla. Stir into dry ingedients in large bowl just until combined, fold in pecans. Spread batter into prepared pan. Bake 65 to 70 minutes or until toothpick comes out clean. Cool in pan for 10 minutes. Mix together glaze ingredients and drizzle over top.
